Grilled Spicy Buffalo Chicken Nachos combines two of my favorite things: nachos and Buffalo wings! I’m always trying to make grilled Buffalo chicken spicy while still maintaining the true Buffalo flavor. A lot of the time to get Buffalo chicken spicier cooks use stronger chilies like habanero or ghost pepper, but that completely changes the flavor. I find that getting the right spices and marinating the meat for a long time is the way to go.
For the chicken:
- 1 medium size chicken breast
- ¼ cup Frank’s Red Hot
- 2 tablespoons olive oil
- ¼ teaspoon cayenne pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon Adobo all purpose seasoning (can substitute salt to taste)
I mixed all the ingredients in a plastic bag and set it in a bowl (to avoid leakage) and marinated it for 3 hours in the fridge. Then I took the bowl out and set it on the counter for about 20 minutes. Allowing it time on the counter helps the marinade to go deep within the meat and takes the chill off of it. If you’re not comfortable doing this then leave it in the fridge for a little longer.
Now just grill the chicken over medium heat until cooked through or the internal temperature is 165 degrees F or 75 degrees C. Let the chicken rest slightly before chopping.
- 2 ½ cups tortilla chips (about 2 servings)
- ½ to 1 cup of mozzarella cheese (basically your desired amount)
- ¼ cup prepared Buffalo sauce
- ¼ cup blue cheese dressing for dipping
Pile the tortilla chips on a microwave-safe plate and put half the amount of cheese evenly over them. Then add the chopped grilled chicken followed by the rest of the cheese. Microwave on high 30 minutes at a time until all the cheese is melted. You can also do this in the oven if you’d like. Now drizzle the Buffalo sauce on top and serve with the blue cheese dressing on the side.
I consider this one serving since I’m a crazy person who loves nachos, but it’s more like two servings. Luckily when I made this there was no one around to share it with! Hehe! This recipe is spicy Buffalo goodness!
