These days we’re all trying to be healthier and make changes to our everyday diet. With the increase of food blogs and vlogs we’re given a plethora of recipes to try. One that’s been standing out recently is the 2 ingredient banana pancakes. I tried this before with just banana and eggs, but it was only OK. Nothing horrible, but it mostly tasted like a custardy banana. So I thought I’d give Banana Oatmeal Pancakes a try.
I found this recipe Banana Oatmeal Protein Pancakes Gluten Free from thewholesomefork.com. I’ve made oatmeal pancakes before and loved them, but they still have added sugar and some flour. This recipe is simple and healthy. The ingredients are: bananas, eggs, oats and cinnamon. So it’s basically the same as the 2 ingredient pancakes except you’re adding oats that have been ground up in a food processor or blender. The important thing I want to note about these pancakes is that they are just 71 calories each! Crazy good!
I have a griddle pan that I use almost everyday. That’s what I cooked these on. I highly recommend getting one especially if you like to grill but don’t have the outdoor space for one. These griddle pans are two sided, one is a flat griddle the other is a grill top and it fits over two gas burners on your stove top. It makes it so you can cook a lot of food at once. Mine is over a decade old and it’s by the Nathan’s hotdog company and I can’t even find it except on ebay for like $50! Crazy! The Verdict: Delicious! The cinnamon really bites through the banana flavor so it isn’t so overpowering. The oats give the pancakes a little more texture so it’s not so custardy. If you’re expecting these to be like your everyday fluffy pancakes you will be sorely disappointed. There’s a reason why we love the unhealthy versions of food and it’s mostly due to texture and added sugar.
Changes and Ideas for the Future: I would like to add other flavors in like vanilla extract, peanut butter and/or chocolate chips. I had these with real maple syrup and they were awesome. I also tried a bite with some natural peanut butter smear on it and that too was delicious. If you’re trying to eat healthier with better ingredients then you should definitely give this recipe a try.
