I’ve been looking forward to making these Restaurant Style Boneless Buffalo Bites! Who doesn’t love busting out the deep fryer…well, that is until your whole house starts to smell like a greasy spoon! It’s worth it though! There are a ton of recipes out there for this, but I decided on Boneless Buffalo Wings from chilisathome.blogspot.com. I figured who doesn’t like getting appetizers from Chili’s? At least to me they are pretty good as far as chain restaurants go.
This recipe is pretty standard. Boneless chicken dipped in an egg and milk mixture then in a well seasoned flour mixture, twice. This way you get a nice coating on the chicken. The recipe recommends letting the chicken sit for 15 minutes in the fridge after coating, but I think I’d like to let it sit longer next time. My first batch wasn’t as good as the second.
On the other hand, another reason why my second batch was better was because I sauced each bite individually. The first batch I put all the chicken bites in the sauce at once and the breading started to come off the chicken as I mixed them around. When I sauced them individually the coating stayed in place and was much more crispy.
Just a side note: I used store bought Frank’s RedHot Hot Buffalo Wings Sauce, 12 oz It’s got great flavor and a good kick.
The Verdict: Delicious, but like I said I had a little trouble with the coating staying on. I know it’s probably more so due to how I prepared it. I plan on working with this a little more to see if I can get a crispier, more solid coating.
Changes and Ideas for the Future: I think this is a great recipe. I don’t think there needs to be any changes. I will work with it again and update this post if my opinion changes.
